Ingredients
- 3 medium zucchinis
- 1/4 cup rice
- 1/2 cup melted butter
- 100 g ground beef
- 1/2 medium onion
- 1/2 Tbsp tomato paste + 1/2 Tbsp for cooking
- 1/4 cup olive oil + 2 Tbsp for cooking
- 5 sprigs of parsley, chopped
- 1/2 tsp oregano
- Salt & pepper
- 1 cup of hot water
Instructions
- 1.Cut the zucchinis in half and carve them out.
- 2. In a mixing bowl, mix ground beef, rice, chopped parsley, and onion, tomato paste, olive oil, salt, and pepper.
- 3. Mix hot water, tomato paste and olive oil.
- 4.Stuff the zucchini and place them in the pot.
- 5. Pour the water mixture over the zucchinis. Cook the zucchini and rice until soft.
